Long egg is a processed egg full of nutrition that is cooked in a cylindrical tube or bamboo so that it is elongated like a tube, has a compact texture, and tastes better than a boiled egg with a shell. These processed eggs can be combined with spices and are easy to make. The production costs are relatively inexpensive and can be used as a business opportunity for groups.
“Eggs are a source of animal protein that is easily digested and is very good for consumption by children so it can prevent stunting. Eggs are also very good to be consumed by people in the process of healing from illness and elderly people who generally have difficulty digesting and absorbing food,” said the Head of the Milk and Egg Technology Laboratory of the Faculty of Animal Sciences (FAS) UGM, Prof. Dr. Ir. Nurliyani, MS., IPM when contacted on Monday (4/20).
The low calorie value of eggs is very suitable for consumption by individuals who have overweight problems. However, it should be noted how to process eggs in order to get optimal nutrition. Boiling eggs in a timely manner is one way to get good nutrition. Long boiled egg is an example of processed egg with a relatively short time (until the egg has thickened / cooked) so that it can maintain its nutritional value.
Nurliyani said, long eggs can be made from chicken eggs or duck eggs. Making a long egg is very easy. First, separate the yolks and egg whites, then shake each one. Next, prepare two bamboo tubes of different diameter and coated with aluminum foil with the length exceeds the length of the bamboo so the eggs don’t stick. Cover the bottom end of the bamboo.
Next, insert the small diameter bamboo into large diameter bamboo. Put the egg white into a large diameter bamboo and put it in a pan of water, then heat it. After the egg whites are lumpy, remove the small diameter bamboo and then fill with egg yolks until cooked. The egg is removed by pulling aluminum foil. Long eggs can also be burned on hot coals (charcoal) with the same steps as boiled long eggs.
“Once cooked, long eggs are cooled, sliced, and can be consumed immediately or used as additives in soups or boiled noodles. Long eggs can also be made into various dishes, for example balado, pepes, steak, sweet and sour, etc. If not consumed immediately, long eggs can be stored in the refrigerator,” Nurliyani said.
The practice of making long eggs has been carried out in the Family Welfare Program group in Karangturi, Baturetno, Banguntapan, Bantul in 2019. This area has local potential in the form of eggs from chickens and ducks that are maintained by residents. The program aims to introduce various processed eggs to residents and open up insights on egg processing business opportunities.
